Recipe: Alaska Salmon Bake with Pecan Crunch Coating

Submitted by Anna who made this using the salmon sent down with Grandma from Dan and Pat.

Ingredients: – 3 tbs Dijon mustard – 3 tbs butter, melted – 5 tsp honey – 1/2 c fresh bread crumbs – 1/2 c finely chopped pecans – 3 tsp chopped fresh parsley —I used dried parsley and just read the container to adjust the amount. – 24 oz salmon – salt and pepper to taste – 6 lemon wedges

Ready in 30 min. Serving 6

Directions: 1. Preheat oven to 400 degrees. Mix mustard, butter, and honey in one bowl. In another bowl, mix together bread crumbs, pecans, and parsley. 2. Season salmon with salt and pepper. Place on greased baking sheet. Brush with mustard-honey mixture. Cover the top with bread crumb mixture. 3. Bake for 10 minutes per inch of thickness, measured at thickest part, or until salmon just flakes when tested with a fork. Serve garnished with lemon wedges.  —I actually did do the lemon wedges, and it was a great touch! :o) Anna
